This single origin Ethiopia comes from the Koke Shalaye washing station in the famed Yirgacheffe region. Nestled in the Gedeo zone, the station was founded in 2019 and quickly built a reputation for producing outstanding coffees, even earning recognition in the African Taste of Harvest competition.
Processed using the black honey method, only the ripest cherries are hand-picked, fermented, and carefully dried on African beds to bring out vibrant fruit notes and a lively acidity. Roasted for filter, this coffee highlights the clean, complex, and expressive flavors that make Yirgacheffe one of the world’s most celebrated coffee origins.

There are a myriad of factors involved in brewing delicious coffee from the comfort of your home, but if you remember these 3 golden rules, you'll be on the right track :
- Always grind fresh
- Always use filtered water
- Always brew great quality beans
-
The greatest enemies to your beans are air, moisture, heat, and light. To preserve their fresh roasted flavour as long as possible, store them in an opaque, air-tight container at room temperature. Coffee beans can be beautiful, but avoid clear canisters which will allow light to compromise the taste of your coffee.
-
Making coffee is a nuanced experience, but one that doesn't have to be over complicated.
Using a timer & a scale for measuring your coffee's weight & brew times are great ways you can keep track of what's happening, and then make the necessary adjustments if something isn't quite right.
